Yes Is it feasible that POS user can not modify to any field for cash customer from point of sale.
By using below steps pos user can not modify the cash customer information from point of sale.
Open iVend Enterprise MC -- > Administration -- Authorization
Security Role -- > Select the Role > Click on edit
Go to the option assign security rights
Click on POS Settings
Select NO against Update Cash Customer
